It should be fine. Just make sure you keep enough liquid in there. when I make pulled pork in the crock pot I usually put in about a cup or two of water in there, along with a sliced onion. After it's mostly cooked I take the pork out, chop it up, get rid of most of the fat, pour in some bbq sauce (anywhere from a half to a whole bottle), add a few seasonings, and cook a while longer.
